Maria’s Almost-Famous Clean-Out-the-Cabinet Stuffing

It was a good year.

Every year, when I make Thanksgiving dinner, I also make one of my favorite so-not-on-my-low-carb-diet dishes: stuffing (AKA, dressing). I like this dish so much that if you took away the turkey and all the other fixings and just gave me a dish of this, I’d be very happy. What’s more is that the way I make it, it includes food from all the food groups except dairy, so I can argue that it’s a meal in itself.

Because the recipe varies from year to year — depending, of course, on what ingredients are handy to toss into it — I never know how it’s going to turn out. Last year was probably one of my worst concoctions. But this year was one of my best.

If you’d like to try your hand at this, here’s my basic recipe, along with a list of what I tossed in this year.

Base Ingredients:

  • 1 pound sausage meat. I use breakfast sausage and I prefer Jimmy Dean sage sausage. I don’t buy the low-fat kind; it usually doesn’t generate enough fat to need draining.
  • 1 medium or large onion, chopped. I usually use a large one.
  • 2 stalks celery, trimmed and chopped. I generally don’t like celery, but it’s one of the “aromatic vegetables” I include.
  • 2 large carrots, chopped. Or chopped up baby carrots, which is what I use.
  • 1 apple, chopped. Any kind of apple will do.
  • Turkey or chicken broth. Use the amount you’d need to prepare the rice (if included, see below) plus the amount of stuffing included (see below).
  • Prepared stuffing mix bread cubes or crumbs. This year I used Pepperidge Farm that I bought last year and didn’t use. I don’t use Stove Top brand. If I use a stuffing mix that has a separate seasoning packet, I throw that packet away. Sometimes I use a small package of cornbread stuffing with a small package of “herb seasoned” stuffing. Never the same two years in a row.

This Year’s Toss-Ins:

  • Brown or wild rice. Or a rice blend. I usually find a package in the cabinet with less than 1/2 cup left in it and toss that in.
  • Chestnuts, cooked and chopped. Trader Joe’s sells them prepared and that sure does make life easier.
  • Almonds, chopped. I used blanched slivered almonds this year. Sometimes I use pecans or walnuts — whatever is leftover from baking earlier in the year.
  • Raisins. Another clean out the cabinet item; this year I found some golden raisins that were turning brown.

In the past, I’ve also included bacon, ham, turkey giblets (the stuff in the bag stuffed into the raw bird’s chest cavity that most people throw away), garlic, yams, parsnips, turnips (I sure do love my root vegetables), other nuts, oatmeal (not sure what I was thinking there), dried cranberries, dried cherries, sesame seeds, flax seed, etc. I can’t remember them all. The key is to go through the refrigerator and pantry and decide what might “work” in the mix. You can’t really get it “wrong” if it’s something you like — the big exception being something silly, like chocolate. (There’s a time and a place for chocolate and T-day stuffing is not the place.)

Cooking Instructions:

  1. Brown the sausage meat together with the onion and celery. Be sure to break apart the meat and stir it good. Unless there’s a lot (more than 1/4 cup?) of fat in the bottom of the pan, don’t drain it off; it’ll mix in and add flavor.
  2. Add the carrot and any other hard vegetable likely to need a little extra cooking. Simmer everything on low heat until the flavors are melded.
  3. All all other ingredients except the broth and stuffing mix. Stir it up well while simmering.
  4. Add the broth and bring the mixture up to a boil.
  5. If the mixture contains rice, cook until rice is mostly done.
  6. Add the stuffing mix and stir well to make sure all bread is moistened. Cover until ready to use/eat.

I don’t make the turkey — that’s my husband’s job. I make the stuffing. We don’t put the stuffing into the bird. The main reason for this is that we always make turkey soup the next day — indeed, my husband is prepping that now — and when the bird has been stuffed, boiling the carcass to make soup yields a cloudy broth that simply isn’t appetizing. Besides, the argument that cooking the stuffing inside the bird makes the stuffing more flavorful just doesn’t apply here. The stuffing is flavorful because of all the flavors cooked into it.

Yesterday’s stuffing came out very good. I had some for lunch and then had some with my turkey dinner later in the day. My guests seemed to enjoy it. Of course, because I put so much stuff into it, I have a ton of it leftover — not the best situation when I’m trying to cut carbs — but it freezes tolerably well and can always be pulled out later in the year to enjoy with another meal.

A Few Aerial Views from Today’s Flight

Any excuse to fly.

Don and I went flying today. Don had left his jacket at the Payson Airport (PAN) restaurant. I had just gotten a pair of Bose A20 headsets I wanted to try. Seemed to make sense to fly up to Payson, retrieve Don’s jacket, and give the headsets a try.

We left Deer Valley Airport (DVT) at about 10:30 AM. As usual, I had a GoPro hooked up on the helicopter’s nose, recording 720p video. The photos throughout this blog post are frames from the resulting 2 hours of video. I figure I’ll let the photos and captions tell the story.

Don was told that this little ranch once belonged to Johnny Carson. Who knows? All I know is that it’s in dire need of a new roof right now.

Indian Ruins
Although nearly impossible to spot in this photo, this ridge was completely covered with the ruins of an ancient indian pueblo. I can think of nearly a dozen such sites — all inaccessible by road or trail — in Arizona.

On first reviewing the video, I thought this was the Verde River Valley. It’s not. The Verde River is over the next mountain range. Whatever.

At the Confluence of the East Verde River, we turned right and followed that toward Payson. The wind kicked up here and we got bounced around a little, but nothing bad enough to spoil the flight.

Eventually, we arrived at Payson Airport. I crossed the runway midfield low-level and set down on the ramp.

At the airport, Don and I went into the restaurant and had a late breakfast. There were boxing up pies for sale — tomorrow is Thanksgiving after all — and I bought two of them. Don and I dug into one right at the restaurant, since Mike doesn’t like strawberry rhubarb and Don and I both do.

We took off along the taxiway (sort of) and headed south along the main road toward Roosevelt Lake.

Tonto Creek
We hooked up with Tonto Creek and followed it down along a canyon neither of us knew existed. There’s nothing I like better than discovering new places when I’m out flying. This might have been the first time I’d flown between Payson and Phoenix.

Roosevelt Lake
Eventually, we reached the north end of Roosevelt Lake on the Salt River. The water level was down, but not nearly as much as Horseshoe Lake.

The lake is created by a dam on the Salt River. There’s a really nice looking bridge near it. I had to get kind of close to get this shot. Funny how the water looks green from certain angles.

We rounded the bend at the dam and headed down the Salt River Canyon toward Phoenix.

Apache Lake
Next up was Apache Lake, shown here near the motel/marina complex, which is quite a way down the Apache Trail’s unpaved road. As we neared the canyons on the downstream side of the lake, the wind started bouncing us around pretty good.

This dam creates Apache Lake. Two items of interest here: the helipad on the lake side of the dam itself — really! — and the network of wires running down the canyon. I would not like to land at that helipad. (Well, actually, I would, but that’s because I’m curious to see if I could do it gracefully.)

Canyon Lake is one of my favorites. A bit more accessible by car than Apache, the lake winds through canyons after this point. Next year, when I bring my little boat back from Washington State, I’ll take it out on this lake for a weekend with my camping gear. Lots of places to camp along the lake.

Saguaro Lake
We flew past the big “S” of Saguaro Lake from the uptake side. Saguaro is the most accessible of the Salt River Lakes so it’s usually the busiest on weekends. We flew over on a Wednesday, so it was pretty quiet.

Fountain Hills
After flying along the Salt River for a while and seeing a handful of wild horses standing in shallow water there (sorry, no good photos), we headed west, over Fountain Hills.

Then we crossed over the southmost end of the McDowell Mountains and descending into the Scottsdale area. We headed toward Scottsdale Airport (SDL) and crossed over the top at 500 feet AGL, right behind a Cessna doing touch and goes. Then I adjusted course to Deer Valley Airport.

I landed at Deer Valley from the west, as I usually do, making a sharp right turn over Deer Valley Road. The red circle in this photo is my landing zone at Atlantic Aviation there. It’s a tricky LZ, mostly because it’s such a tight confined space and there’s a few light poles to avoid on the way in.

Don left while I took my time getting my things together. It had been a nice day out.

Any excuse to fly works for me.

The Old Gold Dredge in Buckhorn Wash

The story I heard with yesterday’s photo.

I heard the story years ago.

A gold miner had built a dam in Buckhorn Creek, north of Phoenix, east of Wickenburg. He’d put a boat on the resulting body of water to dredge for gold. But a heavy rain caused the dam to fail. The water emptied southeast down the creek, taking the boat with it. It was soon stuck in the sand down the dry wash.

We flew over it yesterday in Don’s helicopter. I’d shown it to him a while back while flying out in that area and he’d tried to relocate it several times since then. Yesterday, I found it for him again and he marked it with his GPS. I shot this photo.

Doesn’t look much like a boat, does it? Vandals have been at it rather violently, it seems. And I’m sure more than a few minor floods helped the decay. When I first saw it, it looked like the image about a third of the way down this page, which was dated 2003. You can see an even later photo near the bottom of this page.

I don’t know if the story I heard is true. And I don’t know when all this happened. I’d love to know more about it, so if you have any ideas or links to additional resources, please share them in this post’s comments.

It’s a good example, however, of some of the really weird things we fly over out in the Arizona desert.

How the U.S. Postal Service Can Save Itself

Five tips for avoiding bankruptcy/bailout.

USPS LogoIt’s pretty big news, every once in a while, that the U.S. Postal Service (USPS) — which is not funded by tax dollars — is on the verge of going broke. Then they raise rates by a few pennies and the hubbub dies down.

I think the big problem with the USPS is that it’s unable to keep up with changes in technology that make its core business model nearly obsolete. After all, the main business of the post office is to provide mail delivery service. In the past, this included personal and business letters, bills and bill payments by check, postcards, and other bits of correspondence. Letters have been mostly replaced by fax and email. Bills and bill payments are being replaced by online billing and bill payments. And who sends postcards in the age of smartphones when you can share vacation pictures as you take them via MMS or email?

As technology moves on, the USPS’s services are less and less needed. But does that mean they’re not needed at all? Of course not. (Not yet, anyway.)

Bad management and spending practices by the USPS are what’s putting it in peril these days. Simply said, the USPS needs to cut costs and raise revenues. Here’s what I propose:

  • Raise prices on bulk mail. It’s widely known that the USPS gives huge discounts to big customers — the same people who fill your mail box with what most of us consider “junk mail.” Not only is this extremely wasteful, but the USPS isn’t making nearly as much money delivering it as it could. I propose that they raise the rates on bulk mail — possibly even making it just as costly as first class mail. The result: fewer organizations will find it cost effective to mail their marketing materials to people who likely don’t want it anyway. The USPS will carry less of this material, thus reducing its costs. And for the remaining organizations that continue to utilize the service, the USPS will likely generate the same (or more?) revenue.
  • Stop trying to compete with FedEx or UPS. Let’s face it: for sending something overnight, FedEx is not only the best deal, but it’s got the most reliable service. Not long ago, the USPS couldn’t even guarantee overnight delivery from Wickenburg, AZ to a major city like Berkeley. FedEx could. As for shipping parcels, I recently shipped a 33-pound computer that I sold on eBay; UPS was half the price of USPS. Yet every time I go into the post office, I see advertisements pushing their services. The USPS should focus on what it does best: deliver small pieces of mail quickly and efficiently throughout the US. That means concentrating on its affordable Media Mail, First Class, and Priority Mail services.
  • Stop advertising. Come on — we all know that the post office exists. We all know what it does. You don’t need massive advertising campaigns to get customers. If I have to mail a letter or document and it doesn’t need to get there overnight, I’ll use USPS. And about those big color posters in the post office pushing your overnight services — see my previous point.
  • Stop giving away free packing materials. I’m talking about those priority mail envelopes and boxes. I know someone who used USPS priority mail boxes to pack when she moved. And no, I’m not kidding. She kept going to the post office and taking boxes. Not a single thing was mailed. I’m not saying that the USPS should stop providing them; I’m saying that they should charge a fee — even something small, like 50¢. It’s worth the money to customers — I’d definitely pay it — and it will generate more revenue while reducing waste.
  • Reduce mail delivery to three times a week. This is the ultimate in cost cutting measures. Unfortunately, it also causes job losses. But guess what? Real companies reduce their workforce to save money; why shouldn’t the USPS? The way I see it, they could deliver to business and commercial addresses on Monday, Wednesday, and Friday and use the same carriers to deliver to homes and residential addresses on Tuesday, Thursday, and Saturday. People who think they really need daily mail delivery can get a post office box, which would receive mail every day as it’s sorted at the post office. Not only does this reduce the cost of delivery, but it could increase revenues from post office box rentals.

So that’s five tips that will help reduce costs while increasing revenues. Why can’t the USPS utilize some combination of these? I think the results will make a huge difference in the continued operation of the USPS as a solvent business.

New Subscription Feature Delivers Full-Text Content from this Site

A while back, I switched to summary post format for RSS feeds. I did this, in part, to stop the feed scraping activity that was violating my copyright to the contents of this site. This disappointed a lot of people. They apparently preferred reading content in their RSS reader application or via email instead of coming to this site.

While I understand the convenience of reading sites in a feedreader — I use a reader on my iPad to keep up with my favorite sites — I don’t have enough subscribers to justify putting my content at risk for scraping. And I figured that people who really wanted to read what’s new here would take the extra effort to follow the link in their feed reader or email notification to go to the site. Hell, it only takes one extra step.

In the meantime, the WordPress folks added a new subscription feature that makes this kind of moot — provided you like to read new content via email. They’ve added email subscription capabilities. Extremely easy for bloggers to configure, it adds a subscription widget to the sidebar. All the reader has to do is enter his/her email address and click a button. Moments later, an email confirmation message arrives in their inbox. Click the link in that message to start the subscription.

Sample MessageThe resulting email messages are nicely formatted to present the entire contents of the blog post. This is an example from earlier in the week; I subscribed to test it out. I chose the HTML format, but there’s also a plain text format. This even looks good in a mobile device like an iPad.

Links in each message give you easy access to settings and the ability to unsubscribe at any time. In addition, all of your subscriptions to WordPress sites are maintained in the same place, so it’s easy to modify settings for all of them at once. In addition to email format, you can also specify delivery frequency: immediate, daily, or weekly. The Delivery Frequency settings lets you specify what time of day or day or the week you prefer. You can even click a check box to temporarily turn off the email messages when you think you might be too busy to read them.

I think this is a great compromise between full-text RSS feeds and summary feeds. After all, if you want the convenience of new content delivered to your mailbox, you have it. My content is protected from feed scraping because it never appears in an RSS feed. But if you prefer to check in via RSS reader, you can continue to do so as you may already be doing — you’ll just need to take the extra step of clicking a link to read the full text of a post that interests you.
